Diet for Candida Menu Two

Diet for Candida Weekly Sample Menu Day Two




Breakfast – Chai Smoothie

Ingredients:

• 2 cups unsweetened soy milk, rice milk or almond milk

• 1/4 cup unsweetened instant tea

• 1/4 cup nonfat plain yogurt

• 1/2 teaspoon ground cinnamon

• 1/2 teaspoon ground ginger

• 1/4 teaspoon ground cardamom

• 1/4 teaspoon ground cloves

• ¼-1/2 teaspoon vanilla to taste

• Ice cubes

Directions:

• Step One - In a blender, combine first 8 ingredients

• Step Two - Add ice to desired consistency.

• Step Three - Pour mixture into glass, serve and enjoy!

Lunch – Baked Potato



Ingredients:

* 1 Idaho russet baking potatoes

* 1/2 cup Greek yogurt (plain)

* 2 tablespoons chopped fresh chives, plus extra for garnish

* Kosher salt and freshly ground black pepper

Directions:

• Step One - Preheat the oven to 350 degrees F.

• Step Two - Wash the potato and place it directly on oven baking rack. Bake for 45 to 60 minutes, until fork tender.

• Step Three - Mix yogurt, chives, 1/2 teaspoon salt, and 1/4 teaspoon pepper and place in a serving bowl. Garnish with extra chives and set in refrigerator until ready to use.

• Step Four – Slice finished potatoes down the middle and push both ends together to spread. Garnish with yogurt mixture. Serve with a side of steamed broccoli or a salad.

Dinner – Oven Fried Chicken

Ingredients:

• 20 whole-grain crackers ground into crumbs

• 2 1/2 cups sugar free corn cereal flakes ground to make crumbs

• 2 tablespoons sesame seeds

• 1/2 teaspoon garlic powder

• 2 egg whites

• 1 cup lowfat, plain yogurt

• 1 tablespoon Dijon mustard

• 1/2 teaspoon salt

• Cooking spray

• 4 medium sized skinless chicken breasts and 4 skinless chicken thighs, rinsed and patted dry

Directions:

• Step One - Preheat oven to 375 degrees F.

• Step Two – Coat baking sheet with cooking spray

• Step Three - Combine the crackers and corn cereal crumbs, sesame seeds, cayenne, and garlic powder in a shallow bowl.

• Step Four - In a large bowl, combine egg whites, yogurt, Dijon mustard, and salt.

• Step Five – Place the chicken pieces into egg white/yogurt mixture and coat thoroughly.

• Step Six - Dip chicken pieces in the cracker mixture, packing crumbs onto chicken.

• Step Seven – Place coated chicken pieces on baking sheet • Step Eight – Spray chicken pieces lightly with cooking spray

• Step Nine - Bake for 45 to 50 minutes, or until thickest chicken piece reaches 180 degrees
